Pet-Nat Magénta

The grapes are pressed after a short maceration and fermentation starts in stainless steel. The wine is bottled under a crown cap before fermentation ends for natural carbonation. No sulfites added.
Pet-Nat White

2020 Domaine Sauvage Red Blend
31% Carbonic maceration reveals black cherry aromatics, combined with German chocolate cake and a faint touch of tobacco.
An acid driven food wine, medium in body with a low tannin profile. Extended lees aging and daily stirring of the neutral french oak barrels adds volume to the wine. Racked only once, minimal sulfites added at bottling. Your new favorite house red.

2021 Domaine White Blend
Soft, fesh and medium-light bodied with a lively acidity and lush, textured mouthfeel. A floral jasmine bouquet and slight grassiness is combined with ripe pear aromas. Juicy gooseberry, papaya, and lemongrass notes are matched ith a light, toasy underlyig flavor. A touch of gravelly minerality lingers om a lasting dry finish.

2019 Reserve Red Blend
A rare bordeaux inspired blend of Malbec and Petit Verdot. Structured and full bodied blend full of concentrated black and blue fruit flavors. Soft, velvety tannins compliment a brown spice and white pepper bouquet. Black currant, cooked plum, and clove are predominant with vanilla bean and mocha on the finish.

Aromas of honeycrisp apple, pineapple, overripe mango awaken the senses. Flavors of lychee, fresh apricot, honeycomb, and a zip of key lime dance across the palate. A nutty dryness lingers on the finish. A rare twist on a classic Rhone blend with the addition of Chardonnay.
Chardonnay was pressed whole cluster into a stainless steel tank and the malo-lactic fermentation was blocked. Viognier was picked early to add fruitiness and acidity. A small percentage of Roussanne was barrel fermented and aged in neutral french oak.

A commanding acidity profile is harmonized with a medium-dry structured body and a steely minerality. Honey blossom and cantaloupe aromas are complemented by lingering guava and Crenshaw Melon flavors. Inspired by classic, Old World techniques the juice was oxidized and fermented at low temperatures. An early bottling followed at the end of winter. This Reisling was built to age for years.
